In order to develop a railroad line between Florence and Phoenix, The Eastern Arizona Railroad requested donations of the right of way in 1902. A man named William Gilbert owned a rail siding that was created on Mr. Gilbert's land. For several years it remained an agriculture community, and until the late 1920's, came to be known as the Hay Capital of the World. During the 1970's, Gilbert started to become the modern community when a strip annexation was approved by the Town Council that included some 53 square miles of county property. The Town Council recognized that Gilbert would eventually develop and grow much the same as the neighboring communities of Chandler, Mesa, and Tempe, although in 1970 the population of Gilbert was only 1,971 people. As Gilbert was positioned for growth during the 1980's and beyond, this proved to be a very wise and farsighted decision.
Ever since 1920 when Gilbert was incorporated, the Mayors if Gilbert have always listened to its residents. These Mayors had led its celebrations and fought for the community. The construction of the Roosevelt Dam boosted the standing of the town that was once a farming community. The dam helped to regulate water for farming. There were some 500 farming families in Gilbert in 1920.

Every year Gilbert is the host of a large rodeo. This is referred to as Gilbert Days and occurs during the month of November. There are numerous activities, such as parades to celebrate the rich heritage of gilbert.
